Scalloped hunter's medallions

Ingredients for 3 servings:

  • 6 pork medallions or fillet
  • 200 ml sweet cream
  • 2 tbsp sauce powder for hunter’s sauce
  • 2 tbsp cranberries
  • Fat for the mold

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Preheat the oven to 200°C (top/bottom heat). Wash the pork medallions, pat dry, and place in a greased baking dish. Mix the cream with the sauce mix and cranberries. Pour over the medallions and bake in the oven for about 25 minutes. Bread dumplings and green beans are particularly delicious with this dish. Spätzle or tagliatelle are also delicious. I always make at least a double batch and usually prepare it ahead of time so it has a nice rest before it goes into the oven.
