Scampi in honey-soy sauce

Ingredients for 2 servings:

  • 400 g scampi, medium-sized
  • 80 ml honey
  • 60 ml soy sauce, dark
  • 2 cloves garlic, grated
  • 1 tbsp, heaped ginger, fresh and chopped
  • 2 tbsp olive oil
  • spring onion(s)

Working time approx. 20 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 3 minutes; Total time approx. 43 minutes

with garlic and ginger

In a bowl, mix the honey with soy sauce, garlic, and ginger. Peel and devein the scampi. Toss with half of the marinade and marinate in a sealable plastic bag in the refrigerator for about 20 minutes. Set the other half of the marinade aside. Remove the scampi from the marinade and discard the remaining liquid. Heat olive oil in a pan and fry the scampi for about 40 seconds on each side. Add the second half of the marinade and cook for another minute. Sprinkle with chopped green spring onions and serve with rice, vegetables of your choice, or mie noodles.
