Scampi in wine sauce

Ingredients for 4 servings:

  • 75 g butter
  • 1 clove(s) garlic
  • 4 tomatoes
  • 2 small onions
  • 2 tbsp parsley, chopped
  • ½ tsp oregano
  • 500 g scampi
  • 250 ml dry white wine
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Melt the butter and fry the onions and garlic until golden brown. Peel and finely chop the tomatoes, add them, and after about 2 minutes, pour in the wine. Season with herbs and spices. Add the scampi to the sauce and heat through. Serve as a starter with rice or fresh baguette. I like it best when the dish has been left to marinate for a while.
