Scampi with Thai basil (Horapa)

Ingredients for 2 servings:

  • 3 tbsp oil
  • 12 large scampi, peeled and deveined
  • 2 cloves garlic
  • 30 g fresh ginger
  • 6 tbsp chicken broth
  • 2 tbsp soy sauce, light light
  • 1 tbsp soy sauce, Indonesian sweet (Ketjap Manis)
  • 1 tbsp fish sauce (Nam Pla)
  • ½ tsp chili flakes
  • ½ bunch of Thai basil (Horapa)
  • Sea salt, coarse

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

simple and quick wok dish

Pound the garlic and ginger with the chili flakes and coarse sea salt into a paste. Heat the wok and add the oil. Stir in the paste. When the wok is hot, sauté the shrimp in the wok. Once they turn red, add the stock, soy sauce, ketjap sauce, and fish sauce and let it cook for a few minutes. Finally, stir in the chopped basil leaves. Serve with Thai rice.
