Schnitzel casserole

Ingredients for 4 servings:

  • 4 thin pork schnitzels
  • 4 tbsp olive oil
  • salt and pepper
  • 200 g sheep’s cheese
  • 4 beefsteak tomatoes
  • 75 g olives, stuffed with peppers
  • 1 tsp thyme, dried
  • Pepper, colorful

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Pat the schnitzel dry and halve. Fry in hot oil for about 2-3 minutes on each side. Season with salt and pepper. Slice the cheese. Wash and slice the beefsteak tomatoes. Halve the olives. Layer the schnitzel, cheese, and tomatoes in a baking dish. Scatter the olives and thyme over the top. Baste with the cooking oil and sprinkle with mixed pepper. Bake in a preheated oven at 200°C (top heat) for about 15 minutes. Serve with baguette. Tip: You can fry the schnitzel the day before; it’s quick and the kitchen stays clean.
