Kohlrabi Schnitzel: You need these ingredients

Regardless of whether you are a vegetarian, a meat eater, or simply want to use an animal-free variant of the schnitzel – kohlrabi is ideal for making vegetable schnitzel. To prepare the dish for two people you will need the following ingredients:

  • 2 kohlrabi
  • 1 egg
  • a dash of milk
  • 100 grams of breadcrumbs
  • Salt, pepper, and sweet paprika powder
  • oil for frying

Breading & Frying

When preparing the kohlrabi schnitzel, proceed in a similar way to the meat schnitzel.

  1. First peel the kohlrabi and cut the tuber into thin slices (about one centimeter thick).
  2. Bring salted water to a boil in a saucepan and cook the kohlrabi slices in it for about 10 minutes.
  3. Prepare a deep plate and whisk the egg with a dash of milk (about a tablespoon). Season the mixture with salt, pepper, and paprika powder.
  4. Place the breadcrumbs on a second plate.
  5. Now it’s time for the breading: first, dip the kohlrabi in the egg and milk mixture, and then toss the slices thoroughly in the breadcrumbs.
  6. Heat oil in a pan and sauté the veggies until golden brown.
  7. Serve the kohlrabi schnitzel with a cucumber and dill or potato salad, for example.

Recipe alternatives for unusual variants

  • Crunchy breading: mix flaked almonds or cornflakes into the breadcrumbs. This gives an extra crunch. Your schnitzel will be even fancier if you bread it in chopped pretzel sticks.
  • Burger variant: Place the kohlrabi schnitzel between two burger halves and top them with whatever you like – for example, onions, lettuce, and guacamole.
  • Cordon Bleu style: For the schnitzel, take two kohlrabi slices and place a slice of cheese in between. Grated cheese is also an option.
