Schnitzel Utrecht style

Ingredients for 4 servings:

  • 1 large onion(s)
  • 350 g mushrooms, fresh
  • 40 g butter
  • 1 cup crème fraîche
  • 1 cup of cream
  • 4 turkey schnitzels
  • salt and pepper
  • 150 g Gouda, grated
  • Paprika powder

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Peel and finely chop the onions. Trim, wash, and thinly slice the mushrooms. Sauté the onions in half the butter until softened. Add the mushrooms and fry. Then add the crème fraîche and cream, bring to a simmer, and season with salt and pepper. Season the turkey schnitzels with pepper, salt, and paprika and fry in the remaining butter for 2 minutes on each side. Then place the schnitzels side by side in a buttered baking dish. Spoon the mushroom mixture over the schnitzels. Sprinkle with Gouda cheese. Bake in the oven at 180°C for about 15 minutes, until the cheese has melted. The Utrecht schnitzels are best served with tagliatelle.
