Schnitzel with Parmesan Breading

  • 120 g Oatmeal
  • 1 tsp Oregano
  • 1 tbsp Parsley
  • 2 tbsp Parmesan
  • 2 Pc. Eggs
  • 4 tbsp Rapeseed oil
  • 1 Pc. Sweet potato
  • 4 Pc. Schnitzel
  1. Grind the oatmeal in a food processor or use ground oatmeal. Divide into two bowls. Add the parsley, oregano and Parmesan to a bowl of the ground oatmeal.
  2. Whisk the eggs in another bowl. Wash the schnitzel and pat dry. Dip it first in the oat flakes, then in the egg and finally in the seasoned oat flake-Parmesan mixture. Preheat the oven.
  3. Place parchment paper in a baking dish and brush with rapeseed oil. Slice the sweet potato and spread it in the baking dish. Season with salt and pepper and brush with a little oil. Bake the sweet potatoes at 180 ° C for about 20 minutes.
