Schnitzel with Parmesan Breading

- 120 g Oatmeal
- 1 tsp Oregano
- 1 tbsp Parsley
- 2 tbsp Parmesan
- 2 Pc. Eggs
- 4 tbsp Rapeseed oil
- 1 Pc. Sweet potato
- 4 Pc. Schnitzel
- Grind the oatmeal in a food processor or use ground oatmeal. Divide into two bowls. Add the parsley, oregano and Parmesan to a bowl of the ground oatmeal.
- Whisk the eggs in another bowl. Wash the schnitzel and pat dry. Dip it first in the oat flakes, then in the egg and finally in the seasoned oat flake-Parmesan mixture. Preheat the oven.
- Place parchment paper in a baking dish and brush with rapeseed oil. Slice the sweet potato and spread it in the baking dish. Season with salt and pepper and brush with a little oil. Bake the sweet potatoes at 180 ° C for about 20 minutes.
- Heat 2 tablespoons of rapeseed oil in a coated pan and fry the breaded schnitzel in it. Finally, garnish with some grated cheese if you like.
