Scrambled eggs in a salmon coating

Ingredients for 4 servings:

  • 4 slice(s) smoked salmon
  • 6 large eggs
  • 1 shot of mineral water
  • salt and pepper
  • 1 bunch of chives, cut into rolls
  • 1 tbsp butter
  • 4 slices of toast
  • n. B. Salad, mixed
  • n. B. Dressing of your choice

Working time approx. 10 minutes; Total time approx. 10 minutes

The combination of scrambled eggs and salmon served a little more refined

Line 4 small serving dishes (e.g. espresso cups) with cling film and place a slice of smoked salmon on each one, allowing it to hang slightly over the edge. Whisk the eggs with mineral water, salt, and pepper. Add the chives. Heat the butter in a pan and stir in the eggs until set. While still warm, fill the dishes and press in firmly with the back of a teaspoon. Cover as tightly as possible with the overhanging salmon. Toast the slices of bread and cut out round shapes. Place some mixed salad with dressing on each plate, place the slices of bread next to them, and turn a salmon dish out onto it.
