Scrambled eggs with asparagus

Ingredients for 1 servings:

  • 250 g asparagus, green
  • 2 eggs
  • 2 tbsp milk
  • 1 tbsp Parmesan, freshly grated
  • salt and pepper
  • 1 tbsp chives
  • some butter
  • 2 tbsp ham cubes, lean (light)

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

a slightly different snack for asparagus lovers

Rinse the asparagus and pat dry. Peel the lower third and trim off the woody ends. Slice the asparagus diagonally into thin slices, leaving the heads whole. Whisk the eggs with the milk, add the Parmesan cheese and chives, and season with salt and pepper. Heat the butter in a pan and cook the asparagus slices over low heat for about 6 minutes. Add the ham cubes, pour the egg mixture over them, and stir until set. Serve the asparagus scrambled eggs on buttered bread (preferably hearty whole-grain bread).
