Scrambled eggs with kippers à la Gabi

Ingredients for 2 servings:

  • 4 herring fillets (kippers), cut into bite-sized pieces
  • 4 eggs
  • 4 tbsp cream
  • Salt
  • Pepper, white, from the mill
  • ½ bunch chives, chopped
  • 40 g margarine

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Whisk the eggs with the cream, season with a little salt and pepper, and stir in the chives. Heat the margarine in a pan and lightly fry the fish pieces. Pour the eggs over the mixture and let it set over low heat.
