Seafood Salad

Ingredients
 

  • 500 g Fresh seafood or frozen seafood
  • 1 Lemon untreated
  • 5 tbsp Olive oil
  • 2 Fresh leek sticks
  • 2 Tomatoes
  • 2 Garlic cloves
  • 150 ml White wine or rose dry
  • 1 bunch Flat leaf parsley washed and chopped
  • 3 tbsp Winessy white
  • 3 tbsp Salt and pepper
  • 3 Fresh onion

Instructions
 

  • Halve the leek lengthways, wash thoroughly and cut into fine strips. Wash and chop the vegetable onions. Cut the tomatoes into small pieces. Rinse the seafood under running water, dry it and drizzle with the juice of half a lemon. Heat the oil in the pan, sauté the leek and green onion. Press the peeled garlic through a garlic press and add and with half of the tomatoes ... sauté briefly. Deglaze with the wine, add the seafood with the lemon juice and simmer for 8 minutes without the lid. Put the mixture with the rest of the tomatoes in a salad bowl and season with the vinegar, salt and pepper. Let it steep a little and serve with the parsley.
