Ingredients for 2 servings:
- 100 g sugar
- 300 ml milk
- 1 pinch of salt
- 100 g semolina (durum wheat)
- 4 eggs
- 2 tbsp butter

a slightly different version of the traditional Kaiserschmarrn
Bring the milk and salt to a boil and add the semolina. Let everything simmer for about 7 minutes. Separate the eggs. Fold the egg yolks into the semolina. Beat the egg whites with the sugar until stiff peaks form and carefully fold into the semolina mixture. Melt 1 tablespoon of butter in a pan. Add half of the semolina mixture to the pan. Once the first side is golden brown, turn the semolina pancake over and reduce the heat if necessary. Immediately after turning, begin tearing the pancake apart. Continue cooking, turning several times, until the pieces are golden brown on both sides. Then cook the second portion in the same way. Serve with compote or cinnamon and sugar. Tip: It’s best to break it up with a spatula or silicone spatula.
