Semolina soup made easy

Ingredients for 6 servings:

  • 1 ½ liters of meat broth or vegetable broth
  • 9 tbsp, leveled semolina
  • some nutmeg
  • 2 egg yolks
  • 1 tbsp milk
  • Parsley, chopped or chives

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 30 minutes

Bring the well-seasoned soup to a boil, slowly stir in the semolina, and simmer gently for about 25 minutes. Turn off the heat. Combine the egg yolk with milk and nutmeg and stir into the soup. Serve sprinkled with parsley or chives.
