Semolina soup with vegetables

Ingredients for 4 servings:

  • 2 carrots
  • 1 piece(s) celery
  • 1 stalk(s) leek
  • semolina (as desired)
  • 1 tbsp oil
  • 2 tsp vegetable broth
  • Salt
  • pepper

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

First, peel or trim the carrots and celery and finely grate them. Cut the leek into small strips. Then heat the oil in a pan, add the vegetables, and lightly roast them. Add the semolina (amount depends on your preference, depending on whether you want the soup thinner or thicker) and roast it. Pour in about 3/4 liter of water and season with vegetable stock, salt, and pepper. Simmer everything on low heat until the vegetables are soft.
