Sesame – Amaranth – Puffer

Ingredients for 8 servings:

  • 75 g semolina
  • 75 g amaranth
  • ½ tsp sea salt
  • 6 tbsp sesame seeds
  • 200 ml water
  • Butter or oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Bring the wheat semolina, amaranth, and sea salt to a boil with the water. Continue to simmer, stirring, until the mixture thickens. Let stand for 30 minutes without adding more heat. Form 8 balls and form each into a biscuit. Coat with sesame seeds and fry in butter for 3-5 minutes per side until golden brown. Serve with quark and fresh salad or steamed vegetables. If you’re making it vegan, you can of course replace the butter with oil. Caution: Sesame seeds will “pop” in a hot pan!
