Eggplant – Tomato – Packet

Ingredients for 4 servings:

  • 2 eggplant(s)
  • 4 tomatoes
  • 2 cloves garlic
  • Salt
  • pepper
  • oil
  • little water

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Wash the eggplants and cut lengthwise into approximately 4 mm slices, then season with salt. Blanch the slices in batches in a little water in a pan for about 2 minutes (until the water has evaporated). Then add a little oil and fry the slices, turning occasionally, until browned. Let the slices cool. Crush the garlic cloves. Wash and slice the tomatoes. Season with salt and pepper. Brush each eggplant slice with a little garlic, then place a tomato slice in the center of each eggplant slice. Fold the edges of the eggplant over the tomato and arrange on a plate. Serve with baguette, salad, and feta cheese.
