Ingredients for 1 servings:

  • 1 kg flour
  • 100 g sesame seeds
  • 40 g yeast
  • 5 tbsp olive oil
  • Salt
  • Sesame seeds for sprinkling
  • Water, lukewarm, as needed

Khubz bi-s-Simsim (Arabic)

Place flour in a bowl and make a well. Crumble in the yeast and dissolve it with a little lukewarm water. Sprinkle salt on the edge of the flour. Add enough lukewarm water to form a dough that’s easy to knead. Knead vigorously for 5 minutes and let it rest briefly. Then work the sesame seeds into the dough with 3 tablespoons of oil. Brush a baking sheet with the remaining oil. Roll out the dough and cover. Let it rise for about 20 minutes. Brush with water, sprinkle with sesame seeds, and bake in a preheated oven at 250°C for about 30 minutes.
