Ingredients for 1 servings:
- 1 kg flour (whole wheat)
- 40 g yeast
- 1 egg(s)
- 2 tbsp oil
- 1 tbsp coriander, ground
- 1 tbsp caraway seeds, ground
- 1 tsp salt
- Sesame seeds for sprinkling

Ka’k bi – s – Simsim (Arabic)
Place the flour in a large bowl and mix with the spices and salt. Make a well in the center and crumble in the yeast. Dissolve it in a little lukewarm water and gradually stir in the remaining water. Add the oil and knead everything well. Cover and let rise in a warm place for 1 hour. Separate small balls from the dough, shape them into thin sticks, and press the ends together firmly to form rings. Beat the egg with 1 tablespoon of water and brush the rings with it. Roll them in the sesame seeds and place them on a greased baking sheet. Cover and let rise for 1 hour. Bake in a preheated oven at 200°C for 10 minutes, then reduce the heat to 180°C and bake for another 20 minutes. The rings are cooked through when they sound hollow when tapped. Tip: To make the rings crispy, let them dry in the oven for another hour at 100°C. Instead of sesame you can also use black cumin.
