Ingredients for 2 servings:

  • 1 onion(s)
  • 1 clove(s) garlic
  • 2 pointed peppers, red
  • 1 can tomatoes, chopped
  • some olive oil
  • e.g. salt and pepper
  • n. B. sugar
  • e.g. cumin
  • e.g. paprika powder
  • e.g. chili powder
  • 4 eggs, organic
  • e.g. parsley, flat, fresh

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Peel and chop the onion, garlic, and red bell pepper, and sauté in a little olive oil for about 5 minutes. Then add the cumin, chili powder, and paprika and roast briefly. Add the canned tomatoes and simmer with the lid on for about 15 minutes. Remove the lid and let it reduce for another 5 minutes. Season with salt and sugar. Reduce the heat and make 4 wells. Add the eggs, replace the lid, and let the yolks set until the desired consistency is reached. Serve garnished with a little olive oil and chopped fresh parsley.
