Ingredients for 1 servings:
- 400 g apples
- 2 tbsp lemon juice
- 100 ml white wine or apple juice
- 1 pack of dessert sauce, vanilla flavor for cooking
- 50 g sugar
- 50 g almond(s), sliced
- 4 m.-sized eggs
- 1 medium egg yolk
- 70 g sugar
- 1 packet of vanilla sugar
- 80 g wheat flour
- 1 pinch of baking powder
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes
Grease a baking sheet (40×30 cm) and line with baking paper. Preheat oven to 200°C. Filling: Peel the apples and cut them into thin sticks. Sauté the apples with lemon juice and 50 ml of white wine or juice for about 5 minutes. Mix the gravy powder with the sugar, stir until smooth with the remaining white wine or juice, add to the apple mixture, and bring everything to a boil while stirring. Remove the pan from the heat, fold in the almonds, and let cool. Sponge cake: Beat the eggs and egg yolks in a mixing bowl with a hand mixer on high for 1 minute until frothy. Sprinkle in the sugar and vanilla sugar, stirring continuously for 1 minute, and beat the mixture for another 2 minutes. Mix the flour with the baking powder and briefly stir in the mixture on the lowest speed. Smooth the dough onto the baking sheet and bake immediately for about 10 minutes. Carefully loosen the sponge cake, turn it out onto a piece of baking paper sprinkled with sugar, and carefully peel off the baking paper. Spread the apple filling evenly over the cake, leaving 1 cm of space along each long side. Roll up the cake from the long side and let it cool completely. Sprinkle with powdered sugar before serving, if desired, or decorate as desired. Tip: * If you’re preparing the roll for diabetics, replace the sugar in the filling with 30 g of fructose and in the dough with 50 g of fructose. This will naturally reduce the calories in the cake.
