Ingredients for 1 servings:

  • 4 eggs
  • 50 g sugar
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 4 tbsp sour cream
  • 500 g flour plus some for the work surface
  • 750 g fat for frying
  • Powdered sugar for dusting

Instructions

Working time approx. 1 hour; Rest time approx. 1 hour; Cooking/baking time approx. 3 minutes; Total time approx. 2 hours 3 minutes

Whisk the eggs, sugar, vanilla sugar, and salt until the sugar has dissolved. Stir in the sour cream, then gradually add the flour until a smooth dough forms. Cover and let rest in the refrigerator for 1 hour. Roll out the dough on a floured surface to about the thickness of a knife’s back. Cut into diamond shapes about 10 cm in size. Heat the fat in a deep fryer or a tall saucepan and fry the shards in batches for about 3 minutes until golden brown. Then drain on a paper towel, dust with powdered sugar, and serve lukewarm. Here in southern Baden, this Fasnet pastry is often eaten with a good glass of wine. Some also eat it with potato soup. The amount of dough yields about 45-50 shards.
