Ingredients for 1 servings:

  • 4 eggs
  • 500 g brown sugar
  • ¼ liter vegetable oil
  • 450 g flour
  • ¾ tsp baking soda
  • ¾ tsp baking powder
  • 450 g zucchini, grated
  • 225 g hazelnuts, ground
  • ½ tsp cinnamon
  • Cake icing, chocolate
  • Grease for the tray

Grate the zucchini; I always do this in a food processor. Combine the eggs, brown sugar, and oil. Combine the flour, baking soda, and baking powder and stir in. Then stir the zucchini, hazelnuts, and cinnamon into the batter. It’s very important not to mix the batter in the food processor, as it will be far too much dough. Pour the batter onto a greased baking sheet and bake at 175 degrees Celsius (350 degrees Fahrenheit) for about 30-35 minutes. Once cooled, cover with chocolate glaze.
