Ingredients for 4 servings:
- 4 prawns, cooked, peeled with tail
- ¼ melon(s), Galia or Ogen melon
- 4 large sage leaves
- 2 tbsp olive oil
- chili flakes
- pepper
Instructions
Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 50 minutes

Cut 4 melon balls into balls. Wash and dry the sage leaves thoroughly. Prepare a marinade from oil, chili flakes, and pepper and marinate the shrimp for about 30 minutes. Briefly fry the scampi in the marinade, remove, and set aside. Briefly fry the dried sage leaves in the oil, drain. Thread the melon balls, scampi, and sage leaves alternately onto skewers and serve as an amuse-bouche.
