Shrimp curry

Ingredients for 2 servings:

  • 1 stalk(s) leek
  • 2 cloves garlic or more
  • 1 piece(s) ginger (approx. 1 cm)
  • 2 tbsp curry paste, hot
  • 3 tbsp soy sauce
  • 2 tbsp fish sauce
  • 200 ml coconut milk
  • 300 g shrimp(s)
  • some lemon juice
  • pepper
  • some basil leaves
  • oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Clean the leek, halve it lengthwise, and slice it. Crush the garlic, grate the ginger, and chop the basil. Mix a little lemon juice, the curry paste, soy sauce, and fish sauce in a bowl. Heat the oil and sauté the leek briefly. Then add the garlic, ginger, basil, and pepper and cook for a while longer, stirring frequently. Add the curry mixture and cook for a while longer. Reduce the heat, add the coconut milk, and simmer until the consistency thickens. Add the shrimp and simmer/simmer for about 5 minutes until the shrimp are cooked through. Serve with rice.
