Ingredients for 4 servings:

  • 3 eggs
  • 100 g brown cane sugar
  • 250 g flour
  • 1 tsp baking powder
  • 1 dashes vanilla essence
  • 3 tbsp desiccated coconut
  • 5 bananas
  • some milk
  • Oil for frying
  • Cane sugar or desiccated coconut or cocoa for sprinkling

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Mix eggs, brown sugar, flour, baking powder, vanilla essence, coconut flakes, and a little milk into a thick batter. Cut the bananas into pieces and add them to the batter in batches. Remove the pieces from the batter with two spoons and fry in hot oil until golden brown on both sides. Dust with brown sugar, coconut flakes, or cocoa powder before serving.
