Shrimp in coconut milk

Ingredients for 4 servings:

  • 750 g shrimp(s)
  • 1 tbsp ghee or oil
  • 2 onions, cut into rings
  • 2 garlic cloves, crushed
  • 2 chili peppers, red, pitted and chopped
  • 1 tsp ground turmeric
  • 8 curry leaves
  • 500 ml coconut milk
  • ½ tsp salt

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

India & Pakistan

Peel and gut the prawns. Heat ghee or oil in a medium-sized pan. Sauté the onions until translucent, then add the garlic, chili pieces, turmeric, and curry leaves. Stir over medium heat for 1 minute. Add the coconut milk and salt. Simmer uncovered over low heat for 10 minutes. Gently stir the prawns and cook gently for about 12 minutes. If desired, sprinkle with fresh curry leaves when serving; they make a perfect garnish for this dish.
