Shrimp in mango-coconut sauce

Ingredients for 3 servings:

  • 400 g shrimp(s)
  • 1 mango(s), ripe
  • 1 chili pepper(s), fresh
  • 2 cm ginger
  • 2 cloves garlic
  • 1 onion(s), white
  • 2 handfuls of bean sprouts
  • ½ jar bamboo shoots
  • 200 ml coconut milk
  • 2 tbsp oil (e.g. soybean oil, olive oil …)
  • 1 bunch coriander leaves, fresh

Peel the mango, cut into pieces, and puree with a hand blender. Finely chop the chili, garlic, and ginger. Slice the onion into fairly thin strips. Sauté the chili, garlic, ginger, and onion in oil. Add the cleaned shrimp and cook. After a few minutes, add the soy and bamboo shoots. Sauté briefly, then season with soy sauce. Add the mango puree and coconut milk. Bring to a boil, then stir in the chopped coriander before serving. Serve with basmati rice or glass noodles. Serve with a green or arugula salad.
