Shrimp pasta

Ingredients for 2 servings:

  • 500 g shrimp(s)
  • 2 beefsteak tomatoes
  • 1 onion(s)
  • 4 cloves garlic
  • 1 bunch parsley, flat (or 8-herb mix, frozen)
  • salt and pepper
  • olive oil
  • 250 g pasta (e.g. farfalle)

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the shrimp into pieces, dice the tomatoes, and finely chop the garlic and onion. Put the pasta on the heat and cook according to the package instructions. Heat a generous amount of olive oil (the garlic should be able to float in it) in a pan and add the garlic. Briefly brown and add the shrimp pieces. Brown all over, then add the onion and tomato pieces. Simmer until a creamy sauce forms (you may need to add a ladleful of the pasta water). Season with salt and pepper. Add the parsley at the end. Mix with the cooked and drained pasta and serve.
