Shrimp – Pineapple – Curry

Ingredients for 4 servings:

  • ½ pineapple, fresh
  • 425 g coconut cream
  • 2 tbsp curry paste, red Thai
  • 2 tbsp fish sauce
  • 2 tsp sugar
  • 350 g king prawns, raw
  • 2 tbsp coriander, freshly chopped
  • 4 servings of rice (cooked jasmine rice)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the pineapple and dice the flesh. Heat the coconut cream, pineapple, curry paste, fish sauce, and sugar until the mixture is almost boiling. Bone the prawns and remove the intestines. Add the prawns and cilantro to the sauce and poach for 3 minutes. Serve the curry with jasmine rice.
