Chinese pepper and chicken stir-fry

Ingredients for 3 servings:

  • 160 g rice (long grain wild rice mix)
  • 200 g turkey breast fillet(s)
  • 1 onion(s)
  • 1 leek(s)
  • 2 bell peppers, red
  • 2 bell peppers, yellow
  • 2 tbsp oil
  • 1 tbsp lemon juice
  • 250 ml vegetable stock
  • 1 tsp curry powder
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Cook rice in salted water according to the package instructions. Meanwhile, rinse the meat, pat dry, and cut into strips. Peel the onion, halve it, and cut it into strips. Trim, wash, and slice the bell peppers and leek. Brown the meat in oil. After 3 minutes, add the onion, followed by another 3 minutes with the bell peppers and leek. Add the curry powder and cook briefly. Then deglaze with vegetable stock and reduce slightly. Season with lemon juice, pepper, and salt. Serve with the rice.
