Spicy chicken with pineapple

Ingredients for 4 servings:

  • 750 g chicken breast
  • 250 g rice
  • ½ can pineapple, in pieces
  • 1 handful of peas
  • 3 tbsp soy sauce
  • 1 tbsp chili sauce, sweet
  • 1 tbsp cornstarch
  • 3 tbsp oil
  • 1 tbsp vinegar
  • ½ can bamboo slices, cut into strips
  • salt and pepper

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Cook the rice until tender. Drain the pineapple, reserving the pineapple juice. Cut the chicken breast into pieces and toss with cornstarch, soy sauce, and a pinch of salt. Brown in oil, add the vinegar, and simmer over low heat until the meat is cooked. Once the meat is cooked, pour in the pineapple juice. Add the pineapple, peas, and bamboo shoots, and simmer covered for about three minutes. Season to taste with salt, pepper, and chili sauce, and serve with the rice.
