Ingredients for 2 servings:
- 1 tsp olive oil
- 1 onion(s), diced
- 2 cloves garlic
- 1 can of tomatoes, peeled
- 1 tsp parsley
- 450 g raw shrimp(s), shelled
- 85 g feta cheese
- 1 pinch of salt
- 1 pinch(s) of pepper
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes
Shrimp, tomato sauce, feta
Preheat the oven to 215 degrees Celsius (425 degrees Fahrenheit). Heat the oil in a pan over medium heat. Add the onions and fry for about three to five minutes, until translucent. Finely chop the garlic, add it, and fry for 30 seconds. Add the canned tomatoes and bring to a boil. Reduce the heat and simmer for 5-10 minutes, until the sauce thickens. Remove the sauce from the heat and pour it into a baking dish. Add the herbs, shrimp, and feta cheese, and season with salt and pepper. Place the baking dish in the oven and bake for 10-12 minutes, until the shrimp are cooked through. Serve with pasta, rice, or focaccia bread.
