Ingredients for 1 servings:

  • 2 large oranges, untreated
  • 1 large lemon(s), untreated
  • 2 tbsp rosemary needles, fresh
  • 3 tbsp mint, fresh
  • ½ tsp black peppercorns
  • 100 g sea salt, coarse

Instructions

Working time approx. 15 minutes; Rest period approx. 2 days; Total time approx. 2 days 15 minutes

Finely grate the zest of the oranges and lemons. Place the citrus zest in a bowl. Add the rosemary, mint, pepper, and sea salt to the citrus zest and mix everything loosely. Spread the seasoning mix on a baking sheet lined with baking paper and let it dry at room temperature for at least 1-2 days. Stir the seasoning mix occasionally to loosen it up. Roughly grind the dried seasoning salt in a food processor and fill it into screw-top jars. The salt goes perfectly with grilled pork or chicken. It also goes well with lamb stew or tomato dishes. You can also simply sprinkle it on buttered bread.
