Side Dish: Ratatouille
The perfect side dish: ratatouille recipe with a picture and simple step-by-step instructions.
- 0,5 Eggplant fresh
- 1 Zucchini fresh
- 1 Fresh onion
- 1 Clove of garlic
- 1 Can Chopped tomatoes
- 10 leaf Finely chopped basil
- 1 tbsp Finely chopped parsley
- 0,5 tsp Sugar
- 0,5 tsp Celery tuber powder
- 1 Bay leaf
- Salt
- Crushed red pepper
- Olive oil
- Wash the eggplant, quarter it lengthways and cut into small pieces. Wash the zucchini and cut into thin slices. Peel and chop the onion and garlic.
- Heat the oil in a saucepan, sauté the onions in it, then add the garlic and sauté, the onions should be very slightly brown.
- Add the eggplant and zucchini and sauté, then add the tomatoes and spices.
- Bring to the boil, then simmer at a low temperature with the lid on for about 30-35 minutes.
- Remove the bay leaf. Then you can distribute the ratatouille as a side dish on plates.
- PS: If you want to serve the ratatouille as a stew, you can add 300-500ml vegetable stock, tomato juice or water, depending on your taste, before you cook the whole thing.
