Side Dish: Ratatouille

The perfect side dish: ratatouille recipe with a picture and simple step-by-step instructions.

  • 0,5 Eggplant fresh
  • 1 Zucchini fresh
  • 1 Fresh onion
  • 1 Clove of garlic
  • 1 Can Chopped tomatoes
  • 10 leaf Finely chopped basil
  • 1 tbsp Finely chopped parsley
  • 0,5 tsp Sugar
  • 0,5 tsp Celery tuber powder
  • 1 Bay leaf
  • Salt
  • Crushed red pepper
  • Olive oil
  1. Wash the eggplant, quarter it lengthways and cut into small pieces. Wash the zucchini and cut into thin slices. Peel and chop the onion and garlic.
  2. Heat the oil in a saucepan, sauté the onions in it, then add the garlic and sauté, the onions should be very slightly brown.
  3. Add the eggplant and zucchini and sauté, then add the tomatoes and spices.
  4. Bring to the boil, then simmer at a low temperature with the lid on for about 30-35 minutes.
  5. Remove the bay leaf. Then you can distribute the ratatouille as a side dish on plates.
  6. PS: If you want to serve the ratatouille as a stew, you can add 300-500ml vegetable stock, tomato juice or water, depending on your taste, before you cook the whole thing.
