Tortellini Salad
The perfect tortellini salad recipe with a picture and simple step-by-step instructions.
Salad dressing:
- 250 g Tortellini filled with smoked tofu
- 2 Red pointed peppers
- 1 bunch Spring onions fresh
- 285 g Drained corn
- 100 ml Vegetable broth
- 100 g Yogurt
- 150 ml Cream 10% fat
- 1 Shot Vinegar
- 1 Shot Telly cherry pepper
- Freshly grated nutmeg
- 1 tbsp Dijon mustard
- 1 Garlic clove pressed
- Sea-Salt
- Parsley
- 1 Shot Rapeseed oil
- Cook the tortellini according to the instructions on the package, quench and let cool!
- In the meantime, clean and wash the peppers and spring onions and cut into strips. Drain corn! Wash and chop the parsley.
Salad dressing:
- Mix the vegetable stock, yogurt and cream. Add vinegar, pepper, nutmeg, mustard, garlic, salt and season to taste. Finally add a dash of oil and the parsley!
- Carefully fold in the tortellini, bell pepper, spring onions, corn with the salad sauce! Strain in the fridge and let cool down! TASTES LIKE THIS OR WITH GRILLED! 🙂
- Also tastes great with cooked ham! But it doesn’t always have to be animals everywhere, and when grilling there is usually meat! 🙂
