Tortellini Salad

The perfect tortellini salad recipe with a picture and simple step-by-step instructions.

Salad dressing:

  • 250 g Tortellini filled with smoked tofu
  • 2 Red pointed peppers
  • 1 bunch Spring onions fresh
  • 285 g Drained corn
  • 100 ml Vegetable broth
  • 100 g Yogurt
  • 150 ml Cream 10% fat
  • 1 Shot Vinegar
  • 1 Shot Telly cherry pepper
  • Freshly grated nutmeg
  • 1 tbsp Dijon mustard
  • 1 Garlic clove pressed
  • Sea-Salt
  • Parsley
  • 1 Shot Rapeseed oil
  1. Cook the tortellini according to the instructions on the package, quench and let cool!
  2. In the meantime, clean and wash the peppers and spring onions and cut into strips. Drain corn! Wash and chop the parsley.

Salad dressing:

  1. Mix the vegetable stock, yogurt and cream. Add vinegar, pepper, nutmeg, mustard, garlic, salt and season to taste. Finally add a dash of oil and the parsley!
  2. Carefully fold in the tortellini, bell pepper, spring onions, corn with the salad sauce! Strain in the fridge and let cool down! TASTES LIKE THIS OR WITH GRILLED! 🙂
  3. Also tastes great with cooked ham! But it doesn’t always have to be animals everywhere, and when grilling there is usually meat! 🙂
