Ingredients for 4 servings:

  • 200 g bacon, streaky
  • 1 tbsp oil
  • 100 g breadcrumbs
  • 1 kg jacket potatoes (cooked the day before)
  • 375 g flour
  • 1 tsp baking powder
  • Salt
  • 4 tbsp milk
  • Flour, for rolling out
  • 1 egg(s)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Dice the bacon and fry in a little oil until crispy. Add the breadcrumbs and brown, remove from the heat, and set aside. Peel and grate the potatoes, then knead them with flour, baking powder, egg, a little salt, and milk to form a smooth dough. Roll out the dough on a floured surface into a square approximately 1 cm thick. Spread the bacon cubes and breadcrumbs on top. Roll the rectangle up from the long side and cut into 6 cm long pieces. Press the cut edges together firmly. Let it stand in hot, salted water for approximately 20 minutes. Sprinkle with bacon cubes, if desired, and serve. Kassler with sauerkraut goes well with it.
