Simple Bolognese pizza
Simple pizza dough
- 125 ml Lukewarm water
- 5 g Fresh yeast
- 1 pinch Raw cane sugar
- 0,5 tsp Salt
- 250 g Wheat flour 405
Covering
- Leftovers from a Bolognese (previous day) to taste
- 1 piece Gouda cheese (rest)
- Dried oregano to taste
- 2 stem Basil (from own garden)
- 1 Tomato small
Simple pizza dough
- Take a mixing bowl / food processor and add the lukewarm water together with the crumbled fresh yeast, a pinch of raw cane sugar and stir once. Cover with a lid / cloth and let rest for a quarter of an hour (15 minutes).
- Then first add the wheat flour, then add the rapeseed oil & salt and knead for 5 minutes. Flour the work surface lightly and knead again for a few minutes with clean hands until the dough is supple.
- Put back in a lightly oiled bowl and cover with a dough cloth, place in a warm place and let RISE for 40 minutes. After the whole thing has gone, put it on the floured work surface again. Knead again and divide into two equal pieces.
Covering
- To bake the pizza I used a small round stone with a diameter of 21.5 cm. Brush this stone with rapeseed oil and dust with wheat flour. First put the pizza dough on this stone, roll it out and prick.
- Brush the edge of the rolled out pizza dough with a little rapeseed oil and then sprinkle all around with fine salt. Now place the rest of the Bolognese in the middle (it was enough for two small pizzas) and spread with the back of a spoon.
- Take the rest of the Gouda cheese and rub over it with a grater. Sprinkle with oregano and chopped basil. Preheat the oven to 230 ° degrees top / bottom heat. Put one of the two pizzas with tomato slices, the other not.
- Now add the first pizza and let it bake for 20 minutes. Transfer to a plate to remove. Do the second in the same way, just add the tomato slices and bake too. Also put on a plate and cut into pieces with a pizza cutter, serve immediately.
