Simple Broccoli Soup

Ingredients
 

  • 1 Fresh broccoli
  • 1 Potato
  • 900 ml Broth
  • 1 Sprig of thyme
  • 1 tbsp Lemon juice
  • Salt pepper
  • 150 ml Cream

Instructions
 

  • Heat some oil in a saucepan. Peel the potatoes, cut into cubes and fry briefly. Wash and chop the broccoli (including the stalk) and place in the saucepan. Deglaze with the broth. Add the sprig of thyme and simmer for about 20 minutes.
  • Remove the branch and puree everything with the hand blender. Then stir in the cream. Now just add salt / pepper to taste ... Done.
  • Tip 3: For the cream soup, simply use less broth, but more concentrated (e.g. add grainy broth)
