Broccoli and Mascarpone Soup
The perfect broccoli and mascarpone soup recipe with a picture and simple step-by-step instructions.
- 1 liter Vegetable broth
- 300 g Fresh broccoli
- 250 g Rice
- 1 pinch Freshly ground nutmeg
- 1 tbsp Mascarpone
- 1 branch Flat leaf parsley to garnish
- Sea salt and freshly ground black pepper
- Put the vegetable stock in a saucepan, add the rice and let it cook until cooked.
- Clean the broccoli and cut into individual florets. After 20 minutes, add the broccoli florets to the broth. When the broccoli is soft, add the mascarpone and puree the mixture with a hand blender. Season the soup with sea salt, pepper and nutmeg. Add parsley garnish and serve.
