Ingredients
- 750 g Broccoli (frozen)
- 4 Potatoes
- 1 bunch Spring onions
- 200 ml Sour cream
- 200 g Diced ham
- 1,2 L Vegetable broth
- Salt and pepper
- Nutmeg
- Oil for sweating
Instructions
- Peel, wash and dice the potatoes. Wash the spring onions and cut into rings. Heat some oil (I used rapeseed oil) in a saucepan, then sauté the spring onions, potatoes and broccoli.
- Add the vegetable stock and cook with the lid closed. Now puree everything well (my wife insists) and add the cream.
- In the meantime, fry the diced ham. Serve the soup and add some ham on top. Enjoy your meal.
