Broccoli Soup with Ham

Ingredients
 

  • 750 g Broccoli (frozen)
  • 4 Potatoes
  • 1 bunch Spring onions
  • 200 ml Sour cream
  • 200 g Diced ham
  • 1,2 L Vegetable broth
  • Salt and pepper
  • Nutmeg
  • Oil for sweating

Instructions
 

  • Peel, wash and dice the potatoes. Wash the spring onions and cut into rings. Heat some oil (I used rapeseed oil) in a saucepan, then sauté the spring onions, potatoes and broccoli.
  • Add the vegetable stock and cook with the lid closed. Now puree everything well (my wife insists) and add the cream.
  • In the meantime, fry the diced ham. Serve the soup and add some ham on top. Enjoy your meal.
