Broccoli Soup with Ham

The perfect broccoli soup with ham recipe with a picture and simple step-by-step instructions.

  • 750 g Broccoli (frozen)
  • 4 piece Potatoes
  • 1 bunch Spring onions
  • 200 ml Sour cream
  • 200 g Diced ham
  • 1,2 liter Vegetable broth
  • Salt and pepper
  • Nutmeg
  • Oil for sweating
  1. Peel, wash and dice the potatoes. Wash the spring onions and cut into rings. Heat some oil (I used rapeseed oil) in a saucepan, then sauté the spring onions, potatoes and broccoli.
  2. Add the vegetable stock and cook with the lid closed. Now puree everything well (my wife insists) and add the cream.
  3. In the meantime, fry the diced ham. Serve the soup and add some ham on top. Enjoy your meal.
