Simple carrot soup

Ingredients for 4 servings:

  • 500 ml meat broth
  • 500 g carrot(s), diced
  • 250 ml milk
  • 200 g sour cream
  • salt and pepper
  • 2 tbsp parsley, chopped

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

First, bring 250 ml of broth to a boil and cook the carrots in it. Puree with a hand blender. Add the remaining broth and milk and bring back to a boil. Add the sour cream and gently fold in. Season with salt and pepper, and garnish with parsley. Tip: Meat also tastes delicious as a garnish.
