Simple couscous salad

Ingredients for 6 servings:

  • 250 g couscous, weighed dry
  • Water
  • Salt
  • 200 g tomatoes
  • 1 cucumber(s)
  • 250 g feta cheese
  • 1 red bell pepper(s)
  • 1 jar olives
  • 2 tbsp tomato paste
  • 3 tbsp olive oil
  • e.g. basil
  • 3 tsp sambal oelek
  • e.g. lemon juice

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

deliciously tomatoey, mildly spicy, great for grilling or for hot days

First, prepare the couscous according to the package instructions. Then mix with a little olive oil, tomato paste, and sambal oelek. You can also add the basil, spices, and lemon juice if you like. Let the couscous stand for a while and then chop all the vegetables: tomatoes, peppers, olives, and cucumber. Add the vegetables to the couscous and mix everything well. Finally, chop the feta cheese or crumble it over the salad with your fingers. Taste and adjust the seasoning if necessary, or toss with more olive oil if it’s a bit dry. The salad can be prepared well in advance, and it’s a good idea to let it sit for a while, but this isn’t necessary.
