Simple potato soup

Ingredients for 3 servings:

  • 1 ½ kg potatoes, roughly diced
  • 2 carrots
  • 1 stalk(s) leek
  • ¾ liter vegetable broth
  • 6 Vienna sausages (Wienerle)
  • 1 tsp marjoram, possibly more
  • 4 grains allspice
  • salt and pepper
  • oil

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Roughly slice the leeks and carrots and sauté in a little oil. Deglaze with the vegetable stock. Add the roughly diced potatoes and allspice. Simmer until tender. Then discard the allspice berries. Blend everything finely with a hand blender and bring back to a boil. Add the sliced ​​sausages and marjoram, season with salt and pepper. Let stand for another 5 minutes with the lid on. Serve.
