Simple, quick fruit bread

Ingredients for 8 servings:

  • 200 g dried pears, cut into small pieces
  • 200 g plum(s), prunes, cut into small pieces
  • 200 g apricot(s), dried apricots, cut into small pieces
  • 200 g fig(s), dried figs, cut into small pieces
  • 150 g dates, cut into small pieces
  • 100 g Sultanas, cut into small pieces
  • 100 g hazelnuts, possibly coarsely chopped
  • 100 g almond(s), peeled
  • 100 g walnuts, coarsely chopped
  • rum
  • 1 orange(s), juice and peel
  • 1 lemon(s), juice and zest
  • 1 pinch of baking powder
  • 1 tsp cinnamon
  • clove(s), ground
  • Ginger, grated
  • Allspice
  • 250 g flour (rye flour)
  • 100 g butter, liquid
  • 2 eggs, including the egg white
  • Salt
  • some almonds, peeled, for decoration

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Let the dried fruit soak in rum for 2 hours, drain, and knead into a dough with the remaining ingredients. Cover and let rest for a good hour. Then shape into two loaves, top with whole almonds, and brush with egg white or milk. Pierce a few holes in the center with a tester. Bake at 150°C for about 80 minutes. Once cooled, wrap in cling film. Tip: This makes a wonderful gift and stays fresh for a long time; it’s easy to prepare.
