Simple recipe for shortcrust pastry

Ingredients for 1 servings:

  • 400 g flour
  • 250 g butter
  • 150 g sugar
  • 1 packet of vanilla sugar
  • 2 egg yolks
  • 1 pinch of salt
  • Flour for the work surface

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

for cookies, approx. 3 trays

Chop the butter into pieces, quickly knead with the flour, sugar, vanilla sugar, salt, and two egg yolks (this also works in a food processor) until you have a nice ball. Wrap the dough in cling film and place it in the bottom shelf of the refrigerator for a good hour. Then preheat the oven to 175°C (fan). Dust the worktop with flour, flatten the dough, cover it with cling film, and roll out to about 5 mm thick (this will prevent anything from sticking to the rolling pin). Cut out any shapes you like, place them on a baking sheet lined with baking paper, leaving some space between them, and when the temperature is right, place them in the oven on the second rack from the bottom for 7 minutes. Then decorate as desired or stick them together with jam.
