Simple rice casserole

Ingredients for 4 servings:

  • 250 g rice (round grain)
  • 1 liter of milk
  • 1 pinch of salt
  • 2 packets of vanilla sugar
  • 1 lemon(s), grated peel
  • 60 g butter
  • 60 g sugar
  • 3 m.-sized eggs
  • Fat, for the shape
  • Flour , for the shape
  • Powdered sugar, for sprinkling

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Place rice, milk, salt, vanilla sugar, lemon zest, butter, and sugar in a saucepan. If you like it a little sweeter, add more sugar accordingly. Bring to a boil. Simmer over low heat with the lid closed for about 20 minutes. Stir frequently to prevent burning. Then remove the pan from the heat and let it cool with the lid closed. Preheat oven to 190°C. Separate the eggs. Beat the egg whites until stiff peaks form, then stir the egg yolks into the rice. Fold in the beaten egg whites. Grease and flour a baking dish and pour in the rice mixture. Bake in the preheated oven for about 45 minutes. Sprinkle with powdered sugar. Delicious hot or cold.
