Farmer's breakfast with tomatoes

Ingredients for 4 servings:

  • 100 g bacon, streaky, smoked
  • 100 g onion(s)
  • 500 g jacket potatoes
  • 1 bunch of chives
  • 5 eggs
  • 5 tbsp water
  • Salt
  • pepper
  • 3 small tomatoes

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the bacon into small cubes. Peel and dice the onions. Peel and dice the potatoes, and finely chop the chives. Fry the bacon in a large pan over high heat until crispy. Add the potatoes and turn them over when the underside is browned. Turn them over occasionally until crispy. Add the onions and fry briefly. Meanwhile, whisk the eggs with water, a little salt, and pepper. Slice the tomatoes. Pour the eggs over the potatoes and let them set over low heat. Top with tomato slices and sprinkle with chives.
