Ingredients for 4 servings:

  • 40 g lean bacon
  • 400 g hunting sausage or meat sausage
  • 200 g onion(s), peeled
  • 200 g gherkins
  • 40 g tomato paste
  • 600 ml meat broth
  • 1 tbsp oil
  • some salt and pepper
  • 1 bay leaf
  • some allspice berries
  • 1 pinch(s) of sugar
  • Paprika powder
  • sour cream
  • 1 slice(s) lemon(s)

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

Cut the lean bacon, sausage, onions, and gherkin into thin, even strips. Pour the cooking oil into a pan and fry the lean bacon. Then add the sausage and then the onions. Fry everything thoroughly, then add the tomato paste, but don’t let it burn, or it will become bitter. Now add the cucumber strips, fry briefly, and deglaze with the meat broth. Add sugar, a little pepper, and paprika. Place the allspice and bay leaves in a tea strainer and add to the soup. Bring everything to a boil and simmer over low heat for about 15 minutes. Remove the tea strainer, taste, and adjust the seasoning if necessary. Serve traditionally with a slice of peeled lemon and sour cream.
