Ingredients for 4 servings:

  • 1 can coconut milk
  • 1 kg turkey meat
  • Brown rice, quantity as desired
  • 2 yellow bell peppers
  • Cherry tomatoes
  • curry powder
  • 1 zucchini
  • Garlic
  • salt and pepper
  • Sugar
  • oil

Working time approx. 30 minutes; Total time approx. 30 minutes

Turkey meat in coconut milk

Cut the meat into bite-sized pieces and marinate it in curry, garlic, and oil. Bring the rice to a boil immediately, as brown rice takes about 25 minutes. Dice the peppers and zucchini. Brown the meat and place it in an ovenproof dish. Pour in the coconut milk and season with plenty of curry. Season with salt and pepper and add a little sugar. Add the cherry tomatoes at the same time. Cook in the oven for about 20 minutes at around 180°C. Briefly sauté the vegetables and then add the rice. Now all you have to do is set the table and enjoy. Variation: It tastes even better when it’s spicy. I always add 1-2 chilies to the coconut sauce and season the meat with cayenne pepper. A little lemongrass or lime zest to the dish also tastes good.
